The best place to cool off. An oven.
It's an irony almost as delicious as the wines themselves but the fact is that the cool, serene environment in which our wines are kept away from the heat of the Midi sun is....wait for it....an oven!
With a natural well within its walls, our wine cellar was at one time the oven of the ancient Bastide (the fortified town built here by the renegade Cathars in the middle ages). In the blaze of midsummer, meanwhile, between July and September, visitors are also invited in to cool off away from the shimmering heat and be regaled with a glass of wine, tales of the region and a word about our work with the vines.
